Banana Cheesecake




This super simple and delicious recipe will not disappoint! I have been told to call it the f%$king amazing banana cheesecake lol 😆 but let's keep it M rated.


If you are looking for your next favourite dessert or something delicious to add to your next party, this will not disappoint!


I recently cooked this for my best friend and her partner and they loved it! One things for sure cooking for those you love is something special.

What goes into this cheesecake


  • Digestive biscuits

  • Coconut oil

  • Bananas

  • Cream cheese

  • Agave

  • Vanilla extract

  • Cinnamon

You will need the following tools


  • Cake tin

  • Zip lock sandwich bag

  • Baking Paper

  • Fork

  • Blender

  • Spatula

  • Roasting tray

Let's get this started!!!


Ingredients

  • 10 Digestive biscuits

  • 3 Tbs of Coconut oil

  • 3 ripe Bananas

  • 250g Cream cheese

  • 2 Tbs of Agave

  • 1 tsp of Vanilla extract

  • 1/4 tsp Cinnamon

Instructions

  1. Remove the cream cheese from the fridge and bring to room temperature.

  2. Line the cake pan with baking paper

  3. Preheat your oven to 180 degrees Celsius

  4. Half fill a roasting pan with water and place on the bottom rack of your oven

  5. Place 10 digestives into the zip lock bag and crush up the biscuits to fine pieces

  6. Add the coconut oil to the biscuits and add to the cake pan. Firmly push the biscuits into the tray.

  7. Blend remaining ingredients (try not to over blend) until smooth

  8. Add mixture to cake pan and smooth the top

  9. Place cake into oven using the middle rack of your oven

  10. Bake for 25 minutes turn oven off but keep cake in the oven for another 10 minutes with the door closed

  11. Remove and let cool

  12. Place in the fridge overnight and allow to firm up

  13. ENJOY!!

Notes

  • Ripe banans Add to the flavour the riper the better

  • The water in the oven helps to prevent cracking and will ensure your cheesecake does not dry out.

  • I used Agave as the sweetner you could use and other available sweetner maple syrup, honey or even rice malt syrup

  • I was discussing this recipe with a friend and I'm pretty sure you could use other fruits other than banana. I've not tried it though but I certainly will be trying mango!

  • Digestive biscuits are so good in this recipe! I find the base not too heavy and not too sweet.

  • I use Philadelphia cream cheese.

  • Letting it cool completely and adding to the fridge overnight will go a long way to setting this cheesecake and avoid it cracking.
