Cut the mixture into 2cm pieces
Bring a large pot of salted water to boil
Add the gnocchi and cook until they float to the top approx 5 mins (This may need to be done in batches)
Once gnocchi is cooked through remove and drain
Heat up a splash of olive oil in a pan and lightly fry boiled gnocchi until it becomes a little crispy on the outside approx 5 mins
Serve with your favourite pasta sauce or even pesto 👌
ENJOY!!
Notes
You may need to adjust the flour amount depending on how big your sweet potatoes are.
After adding the flour if you are unsure if the dough is ready lightly push the dough down with your finger and if it springs back it’s enough flour
I also know when it’s ready when it no longer sticks to my hands
I lightly fry my gnocchi simply for the flavour and light crispness that it adds. If you are short on time this step can be skipped and just boil your gnocchi.
I will add a quick, easy and healthy pasta sauce recipe so watch this space!
