Sweet Potato Gnocchi

Simply because why not?? This Sweet potato gnocchi is little pillows of deliciousness. If you have never made gnocchi seriously give this a go!

I was sceptical but trust me a few ingredients a little time and you’re done. Super simply and tasty 👌👌

What goes into Sweet Potato Gnocchi?

  • Sweet Potato

  • Plain flour

  • Salt

  • Olive oil

  • Thyme

  • Nutmeg


You will need the following tools

  • Large pot

  • Frying pan

  • Chopping board

  • Knife

  • Fork

  • Baking tray

  • Baking paper


Ingredients

  • 2 medium sweet potatoes

  • 2 cups of plain flour

  • 2 tsp salt

  • 1 tsp Olive oil

  • 1 Tbs dried thyme

  • 1/4 tsp nutmeg


Instructions

  1. Preheat the oven to 180 degrees Celsius

  2. Bake the sweet potatoes on a lined baking tray fot 1 hour or until soft

  3. Allow the sweet potatoes to cool enough to handle then slice lengthways

  4. Scoop out the flesh into a bowl

  5. Add the thyme, nutmeg and salt to the sweet potato

  6. Gradually add the flour and combine with clean hands

  7. Dust a work surface with flour

  8. Remove the sweet potato mix and place on the dusted board

  9. Cut the dough into quarters and roll each quarter into a long cylinder shape

  10. Cut the mixture into 2cm pieces

  11. Bring a large pot of salted water to boil

  12. Add the gnocchi and cook until they float to the top approx 5 mins (This may need to be done in batches)

  13. Once gnocchi is cooked through remove and drain

  14. Heat up a splash of olive oil in a pan and lightly fry boiled gnocchi until it becomes a little crispy on the outside approx 5 mins

  15. Serve with your favourite pasta sauce or even pesto 👌

  16. ENJOY!!


Notes

  • You may need to adjust the flour amount depending on how big your sweet potatoes are.

  • After adding the flour if you are unsure if the dough is ready lightly push the dough down with your finger and if it springs back it’s enough flour

  • I also know when it’s ready when it no longer sticks to my hands

  • I lightly fry my gnocchi simply for the flavour and light crispness that it adds. If you are short on time this step can be skipped and just boil your gnocchi.
