Vegetable Fitters

Quick and easy Vegetable Fritters that are also tasty! This is a great recipe to get the kids involved with vegetables.

4 readily available vegetables let's take a look at the health benefits..


Zucchini

  • Rich in many vitamins, minerals and beneficial plant compounds.

  • Vitamin A which can support your vision and immune e system.

  • High in antioxidants that help protect your body from damage and free radicals.

  • Contributes to healthy digestion being high in


  • soluble and insoluble fibre.

Carrots

  • Fibre in carrots can help keep blood sugar levels under control.

  • They contain carotene antioxidants that has been linked to a reduced risk of cancer.

  • They are a good source of fibre, vitamin K1, and potassium.

  • Contains vitamin B6 which is involved with conversion of food to energy

Potatoes

  • Packed full of nutrients.

  • Contain antioxidants

  • May improve blood sugar control

Corn

  • Corn is rich in vitamin C which helps protect your cells from damage and wards of diseases such as cancer and heart disease.

  • Is a good source of carotenes lutein and zeaxanthin, which are good for eye health and help prevent the lens damage that leads to cataracts.

So let's take a look at what goes into these small parcels of goodness...

  • Corn

  • Zucchini

  • Potatoes

  • Carrots

  • Garlic

  • Eggs

  • Plain flour

  • Baking powder

  • Salt and pepper

You will need the following tools

  • Knife

  • Grater

  • 2 bowls

  • Whisk

  • Sieve

  • Frying pan

Ingredients


2 medium carrots

2 medium Potatoes

1 big Zucchini

1 tsp Salt

1 Corn cob

4 Eggs

1 Tablespoon of garlic

1/2 cup plain flour

1/2 tsp baking powder

Olive oil


Instructions

  1. Coursley grate carrots, Potatoes and Zucchini into a bowl.

  2. Sprinkle with Salt and leave for 10 minutes.

  3. Use your hands and squeeze excess liquid out of the grated vegetables and transfer to a clean bowl.

  4. Crack the eggs I to a separate bowl and Whisk to combine.

  5. Add the eggs to the bowl of vegetables and mix well.

  6. Add the garlic and mix.

  7. Sift the flour and baking powder into a separate bowl and combine.

  8. Mix into the vegetable mixture and season with salt and pepper.

  9. Warm up a tablespoon of olive oil in your Frying pan over a medium heat.

  10. Spoon out the ingredients and flatten out in the pan.

  11. Cook until golden brown one side and flip to cook the next side.

  12. You'll need to cook in batches.

  13. Set aside on paper towel to drain the oil

  14. Serve with some Sour cream and sweet chilli sauce.

  15. ENJOY!!

Notes

  1. It's important to get as much juice out of the veggies as possible, it will help them stick together better.

  2. I have previously added some cheese but I do enjoy them without cheese. Feel free to add some grated cheddar for extra flavour.

  3. Sour cream and sweet chilli sauce is more of a garnish. It's not necessarily so feel free to leave them out.

  4. I usually add a tablespoon of mixture to the pan and flatten down.
