Creamy Mushroom and Spinach Pasta

This delicious creamy pasta with mushroom is quick and easy! You’ll love the creamy taste and of course the buttery garlic mushrooms in this dish are the big winner!

Who could say no to these super delicious mushroom! I’m a huge mushroom fan they are a rich, low calorie source of fibre, protein and antioxidants. They also may mitigate the risk of developing serious health conditions, such as heart disease, diabetes and cancer.

What goes into Creamy Mushroom and Spinach Pasta?

- Garlic

- Olive oil

- Vegetable stock

- Cream

- Wine

- Parmesan

- Pasta

- Spinach

- Butter


You will need the following tools


- Large pot

- Frying Pan

- Knife

- Cheese grater

- Measuring cup

- Chopping board


Let’s get this started!!!!

Ingredients


250g Pasta

2 tbs butter

1 tbs olive oil

400g mushrooms

2 tsp garlic

1 cup white wine

1 cup vegetable stock

3/4 cup thickened cream

1/4 cup Parmesan cheese

3 cups spinach

Salt and Pepper to taste



Instructions


  1. Chop mushrooms into 2-3cm thick slice’s

  2. Bring a large pot of salted water to boil. Add the pasta of your choice and cook according to packet innstructions.

  3. In a large frypan heat the butter and oil on a medium heat until they begin to simmer

  4. Add the mushrooms and simmer until golden brown in colour (6mins approx)

  5. Add the garlic and continue to cook for 2 minutes

  6. Add the wine to the pan with the mushrooms.Simmer until the wine has reduced.

  7. Add the vegetable stock and simmer for 10 minutes

  8. Add the Parmesan cheese then slowly add the cream. Stir until well combined

  9. keeping the pan on the heat stir through the drained pasta. once heated through remove from heat and add spinach.

  10. ENJOY!!



Notes


  1. I used Farfalle pasta but you can use any pasta you have in the cupboard. It is a thin sauce so something the sauce can hang onto will help.

  2. Did you know it’s recommended you use 1 Litre of water to every 100g of pasta?? We are using 250g of pasta so make sure your pot can hold more than 2 Litres of water

  3. In Australia we call it thickened cream however I believe in America and England it’s referred to as heavy cream.

  4. I’ve seen many recipes that require 500g of pasta. This is a lot of pasta for 4 people! Feel free to increase the pasta amount by another 100g the recipe will still work

  5. If you don’t want to use wine that’s fine just add another cup of vegetable stock

  6. I use dried vegetable stock adding hot water to create 1 cup of required stock. Feel free to use liquid stock If that’s what you have on hand.

  7. It’s essential to salt your pasta water! It adds to the flavour!
