Roasted Baby Carrots

These easy roast baby carrots are delicious! It is one of the easiest carrot recipes you will make..

The fibre in carrots can help keep blood sugar levels under control and they are loaded with beta-carotene and Vitamin A. They also have calcium, vitamin C and vitamin K all of which are important for bone health.


Give them a try 30 minutes from now you’ll have a delicious side dish.


What goes into Roasted Baby Carrots?

- Baby Carrots

- Rosemary

- Olive oil

- Garlic

- Spring Onion





You will need the following tools


- Roasting Pan

- Baking paper

- Knife



Let’s get this started!!!!


Ingredients


16 Baby Carrots

1 Sprig of Rosemary

1 tsp Olive oil

1 Garlic Clove

1 Sprig of Spring Onion

Salt and Pepper to taste



Instructions


  1. Preheat your oven to 180 degrees (Celsius)

  2. Place a sheet of baking paper onto your baking tray

  3. Trim your carrots and wash well!

  4. Place carrots on to baking tray and drizzle over the olive oil

  5. Pull off the rosemary from its twig and sprinkle over carrots

  6. Measure out your garlic and also place on the baking tray

  7. Slice up your spring onion and place on baking tray

  8. Toss to combine and sprinkle with salt and pepper.

  9. Place into oven and roast for 10 minutes then turn and roast for a further 10 minutes

  10. Remove from oven

  11. ENJOY!!



Notes

1. I used 1 clove of garlic however if you have minced feel free to use that.

2. I used baby carrots but if you can find immature carrots they will work also.

3. My family prefer to have some crunch still in there carrots after they are cooked so 20 minutes all up and they were just perfect soft and caramelised on the outside but still crisp in the middle. If you like them softer increase the cooking time Remember

though that garlic will burn and become bitter if over cooked. You can add the garlic later on in the cook If you need to increase the cooking time. 4. I suggest baking paper on your baking tray to save you some scrubbing after.

5. I used fresh rosemary because I have a plant at home. You can also used dried it

will work just fine. 6. If you don’t have spring onion you could also use purple onion. It’s can also be left

out entirely. 7. I usually don’t peel my carrots. You may find if you peel these carrots most of the

carrot will be peeled away. I do encourage you to wash and even scrub the skin of

the carrots. If you don’t own a vegetable brush just wipe them over with paper

towel after putting them under running water.
